We make our Dominio de ARVS white using grapes of the Viura variety, from our vineyards in Rioja Alta that are more than 30 years old, in clayey-chalky soils which, with the Atlantic climate, let us create a white wine ideal for dining.
They are picked by hand in the first weeks of September, always at the start of the day so that they reach the winery at the lowest temperature possible.
Viticulture: Vineyards in Rioja Alta over 30 years old.
Yield: 7500 kg/ha.
Vinification: The grapes are pressed as soon as they are received, the must is cold pre-clarified, and then it is decanted into stainless steel tanks. Alcoholic fermentation takes place at an average temperature of 19ºC.
When alcoholic fermentation ends, the wine is aged with its lees, and stirred each week for about two months. Finally, the wine is decanted, separated from its lees and bottled.
Bottle ageing: Minimum of 2 months.
Serving temperature: 12-14ºC.
Recommended food: This white is perfect to accompany all kinds of fish and rice dishes.
